ALPHABETICAL DIET

ALPHABETICAL DIET Alphabetical diet is one in which one's take one letter diet for 26 days regularly. It starts from A and end in Z. It is basically a cooking and eating challenge and allows a variety of diet in every day life. It is not a weight loss plan. Here we discuss food and drinks available in Pakistan. LETTER 'A' APPLES Pakistan is the 10th largest apple producing country globally. The popular varities included Granny Smith, Golden Delicious, KallaKaku, Pink Lady and Red Delicious. Apples contain pectin, a natural fibre found in plants. It has a cholesterol lowering effect. Apples are low on the glycaemic index (GI) prevents diabetes. Apples are rich in polyphenols ' querctin' lower risk of hearth diseases and respiratory problems.  APRICOTS The apricot's native region is Central Asia. It is a fruit with a firm exterior and a soft interior that is smaller than a peach but looks remarkably similar. Apricots are a great food for supporting eye health sinc...

COLUMN CHROMATOGRAPHY

 COLUMN CHROMATOGRAPHY

INTRODUCTION

Column chromatography is a technique used to separate single chemical compounds from a mixture dissolved in a fluid. It separates substances based on different absorption of compounds to the adsorbent, as molecules move through the column at different rates which allow to get separated in fractions. It is used in small and large scale top purify materials that can be used in future experiments. This method is a type of adsorption column chromatography.

PRINCIPLE

When mobile phase and mixture is introduced that need to be separated is introduced from the top of the column. As the movement of the components of mixture is at different rates in column. The component with low adsorption and affinity travels faster as compared to high adsorption and affinity. Molecule travels faster leaves the system first where as those molecules moves slowly leaves system last.

TYPES
  1. In adsorption column chromatography technique, components mixture are adsorbed on the surface of adsorbent. This method is used for separation.
  2. In partition chromatography, both stationary and mobile phase are liquid.
  3. In ion exchange chromatography, stationary phase is always ion exchange resin.
APPLICATION
  • It is used to isolate active ingredients.
  • It is helpful in separating compounds.
  • It is used to determine drug estimation from drug formulation.
  • It is used to remove impurities.
  • It is used to isolate metabolites from biological fluid.

ENZYMES

ENZYMES Enzymes are protein that act as “biological catalyst”. Catalyst accelerates chemical reaction. The molecules upon which enzymes may act are called substrates , and the enzymes convert the substrates into different molecules known as products . LOCK AND KEY MODEL The mechanism of enzymatic reactions in which it proposed that the enzymes and substrates bind temporarily to form an enzyme substrate complex. The binding site on the enzyme is known as the “active site” and is structurally complementary to the substrate. Thus the enzyme and substrate are said to fit together as do a lock and key. COMMON ENZYMES USED IN FOOD INDUSTRY Following are the enzymes used in food processing industry. AMYLASE: Amylase is a hydrolytic enzyme that breakdown starch into dextrin and sugar. Amylase extends the shelf life of bread and working as fermentation improvers. Amylase intensify flavors and crust color by enhancing “ millard browning” and caramelization reaction. Amylase act as c...

FOOD CONSTITUENTS AND THEIR FUNCTIONS

FOOD CONSTITUENTS The nutrients in food, required in balanced amounts to produce and maintain optimum health, belong to the broad group of carbohydrates, proteins, fats, vitamins, and minerals. The food scientist must consider the nutritive aspects of food from two points of view: Firstly, what nutrients do foods contain and what is a human’s requirement for these; and secondly, what are the relative stabilities of these nutrients and how are they affected by food processing, storage, and preparation . The major constituents of food are: MACRONUTRIENTS Macronutrients (also known as macros) are nutrients that the body uses in relatively large amounts and therefore needs to receive daily. ·         Carbohydrates ·        Protein ·        Lipids MICRONUTRIENTS Micronutrients  are vitamins and minerals needed by the body in very small amounts. ·        V...

RHEOLOGY

RHEOLOGY Rheology is the science that concerns with the flow of liquids and the deformation of solids and describes the interrelation between force, deformation and time. The term comes from Greek “Rheos” meaning to flow. TYPES OF FLOW Rheology has developed two classes of liquids: Newtonian and Non-Newtonian fluids. Newtonian Fluids Newtonian fluids are those which follow Newton's hypothesis, and they are considered to be perfectly viscous. This is because the ratio between the shear rate and shear stress are constant, or in other words, the viscosity of the liquid remains constant at all possible shear rates for a given temperature. Examples: Pure water, oils, and organic solvents. Non Newtonian fluids Most liquids are non-Newtonian fluids, meaning they do not have a constant ratio between their shear rate and shear stress. As a result, the viscosity of the material is highly variable.  Examples: mayonnaise, paints and emulsions. IMPORTANCE OF RHEOLOGY Study of rheol...
